Ingredients
2 cod fillets (about 140g each)
300g new potatoes, halved
1 lemon, thinly sliced
Small bunch of parsley and dill, chopped
1 tbsp olive oil
150g green beans
Salt and pepper
Method
1
Heat the oven to 200°C (180°C fan) and boil the potatoes for 12 minutes, adding the beans for the last 3.
2
Lay each cod fillet on a sheet of baking paper with lemon slices, herbs and a little oil, then fold into a parcel.
3
Bake the parcels on a tray for 12 to 14 minutes.
4
Lightly crush the potatoes with a fork and serve with the beans and the cod in its juices.
Why it works
White fish, potatoes and green beans are easy to digest and low in the foods that commonly trigger IBS. Baking in a parcel adds flavour without rich sauces, which suits a gut that’s settling down.
