Miso salmon fillets with lime on a baking tray

Ingredients

4 salmon fillets (about 120g each)

2 tbsp white miso paste

1 tbsp honey

1 tbsp rice vinegar

500g new potatoes, halved

200g tenderstem broccoli

1 tbsp olive oil

2 spring onions, sliced

1 tsp sesame seeds

Method

1

Heat the oven to 200°C (180°C fan). Toss the potatoes in the oil on a large roasting tin and roast for 15 minutes.

2

Mix the miso, honey and rice vinegar into a loose paste.

3

Push the potatoes to the sides, add the salmon and broccoli, and brush the miso paste over the fish.

4

Roast for 12 to 15 minutes until the salmon flakes easily.

5

Scatter over the spring onions and sesame seeds and serve straight from the tin.

Why it works

Protein and healthy fats at dinner help keep blood sugar steady overnight, which matters with PCOS. The omega-3 in oily fish also helps calm the low-grade inflammation that often comes with it.
